In each new game of Mount & Blade 2 the workshops in each town are randomly generated, but the products made in each village are not. Between two and eight villages correspond to each town, and The Release of Mount and Blade 2 Appears to be Just Over the Horizon Mount and Blade 2 is probably one of the most anticipated releases for the PC, and much of that hype is thanks to the lasting success and influence of the original game.
If oyu want to try Mount and Blade without putting too much money on it, check out Warband. It may be missing some QoL stuff that were added in the second game, but the core gameplay is basically the same. Victoria 3 is pretty good, but the tutorial isn't. It gives you some general instructions, but I wasn't too confident going into the real thing.

There really is no reason to interact with it. Sure you sell raw materials to the town, but it is not required. The best things you can do for your workshops/fiefs is keep the attached villages from being raided and ensure the villagers can go to town and sell their material. < 1 2 >. r/mountandblade is incredibly active and I see the occasional warband post there as well as bannerlord. Give them a follow as well. And yes, warband is super janky but lots of fun and it has a great management aspect, which seems like it will appeal to you.
